BRAN MUFFINS 

 

1 cup bran
1/2 cup flour
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp. baking powder
1 egg, well beaten
1/2 cup milk or buttermilk
3 tablespoons molasses
1/2 tsp. vanilla
2 tablespoons melted butter
1/2 cup raisins or Craisins (optional)

Preheat oven to 350°F.

If using raisins, soak in warm water for 10 minutes.

Whisk together flour, salt, baking soda and baking powder, then add the
bran.

Beat egg well, add milk, molasses and vanilla. Combine with the flour
mixture.

Beat well and add melted butter. Stir in raisins or Craisins, if using.

Grease muffin pans well with shortening. Fill 2/3 full with batter.

Bake for 20-30 minutes.

Recipe may be doubled.  Enjoy.
