If it is to thicken, I will probably go with something else. There are several choices, flour, corn starch, or arrow root for starters. Thanks.

If I remember right it is used to thicken. I will try and find out what you can use instead. I have been trying to eat healthy and do not usually use wheat flour unless I am doing cut cookies or something for Christmas and things like that. -----Original Message----- From: Cookinginthedark [mailto:cookinginthedark-boun...@acbradio.org] On Behalf Of Pamela Fairchild via Cookinginthedark Sent: Saturday, May 16, 2020 2:41 PM To: cookinginthedark@acbradio.org Cc: pamelafairch...@comcast.net Subject: Re: [CnD] Easy Cheesy Zucchini Gratin Jennifer, first of all, thanks for sending all the refreshing veggie recipes. Second, why is Xanthan gum used in the recipe below in your message? I have a friend allergic to it so need to substitute with something else or just leave it out. If I know its purpose it will help me decide what to do. Thanks!
