If it is to thicken, I will probably go with something else. There are
several choices, flour, corn starch, or arrow root for starters. Thanks.

First you are welcome.
If I remember right it is used to thicken.
I will try and find out what you can use instead.
I have been trying to eat healthy and do not usually use wheat flour unless
I am doing cut cookies or something for Christmas and things like that.

Jennifer, first of all, thanks for sending all the refreshing veggie
recipes. Second, why is Xanthan gum used in the recipe below in your
message? I have a friend allergic to it so need to substitute with something
else or just leave it out. If I know its purpose it will help me decide what
to do.
Thanks!
