I think there is a difference between knobs and dials. If it is a knob that starts in one place and has settings along that can be marked, that is fine. But some of these machines have some kind of digital dials that change when they move and do not revert back to the same place when no longer in use. You don't want these because there is no way they can be made accessible. The ones with the touch pad, sort of like a microwave, even if not shaped that way, these are also accessible, though they also have to be labeled or memorized. The Instant Pot has this kind of panel, though it is not, of course, an air fryer. Some of this type of machine can also be run from an app, which may or may not be accessible. All this is why it is so complicated.
