Easy Fruit Cocktail Cake with Coconut Pecan Frosting

      2 c  Unbleached Flour

  1 1/2 c  Sugar

      2 c  Fruit Cocktail

      2 ts Baking Soda

      2 ea Large Egg whites

      1 x  Pinch Salt

Coconut Pecan Frosting:

  1 1/2 c  Sugar

      6 oz Margaine

      1 c  Evaporated Milk

    1/2 c  Pecans

    1/2 c  Coconut

In a 9x13" pan mix together the flour, sugar, fruit cocktail, baking

soda, egg whites, and salt.

Bake at 350 degrees F. for about 35 to 40 minutes.

Remove cake from oven; pour frosting over cake and spread evenly.

For Coconut Pecan Frosting:

Over low heat, heat sugar, margarine, and milk until thick.

Remove from heat and add pecans and coconut.  Enjoy.
