Hi Daniele,
I don't think that this is a coot problem (coot is just tickling it).
To my eye, it looks like the executable is build with one particular
library set and executed with another.
google for:
dyld: Symbol not found: _iconv Referenced from: /usr/lib/libcups.2.dylib
It may provide some insight (but I didn't find The Answer).
