Ad. 1. Currently we have all Alder Lake processors / SoCs well supported in
coreboot. One can build a working images with legacy BIOS boot support using
SeaBIOS payload or UEFI compliant boot support using TianoCore EDK2 UEFI
Payload. Having a Linux payload/LinuxBoot is also possible. What may be a
significant difference between the BIOS from AMI and coreboot solutions is the
setup options. coreboot by itself does not provide any runtime configuration
options, this task is shifted to the payload. Currently the most feature rich is
UEFI Payload which offers some basic setup menu for UEFI Secure Boot, TPM
configuration and boot order.

Ad.2. That solely depends on the company who will do the work (and their current
workload). I advise to contact a coreboot consultants, e.g. from this site:

should also give you an overview who is doing coreboot work and ships coreboot
on their devices.

Ad.3. Besides the board specifications (what components are used, etc.), having
a board schematics is a huge help for coreboot developers and most consultants
will ask for it. It is possible to develop coreboot without schematics, but it
will take much more time and resources to make everything working as expected.
Optionally a board PCB view may also be helpful.
