How about a scavenger hunt? What you do is pick out noticable, but not
obvious, ground references at different places around the area. (An old
deserted farm house. Or maybe a unique rock formation. Those sort of
things.) Give out a list of coordinates and clues and see how many of the
references each plane comes back with.

For safety reasons it's important to have at least two people in each
plane. One to fly and watch for traffic, one to look for ground
references. It is also a good idea to space the planes out a bit so you
don't have a dozen planes flying circles in the same airspace while
everyone is looking at the ground. (Someone's day could get ruined that
way.)

Also for safety reasons it's important to have the course flown in
sequence. No "back tracking" and once a plane is back on the ground it
cannot take off again. There should also be a time limit. This is all to
keep traffic at each waypoint to a minimum. Work up your own set of rules
to make it as safe and enjoyable as possible.
