Outlook express has the opposite behavior. It handles the folders the way
you want it to, keepign the mail in the Imap store.. but it won't apply
email rules to Imap folders.
Having tried Thunderbird, Pegasus, and Mulberry, I can't say I'm estatic
with any of the alternatives. (all choked/coughed/sputtered with my 2-3k
item inbox.) Anybody got other imap clients?

In Outlook 2003, when you're showing an IMAP folder, you can go to View >
Arrange By > Current View and choose "Hide Messages Marked For Deletion".
This is as close as I have achieved to "natural" behaviour with Outlook &
IMAP.
Outlook doesn't seem to play very nice with a Real Mailserver (tm),
pulling tricks like saving sent messages in the local mailboxes rather
than "Sent Items" on the server. It does not seem possible to deploy a
IMAP server settings to Outlook using domain profiles, and Outlook
defaults to saving a set of "Personal Folders" in the local profile (as
opposed to the domain one), adding an additional inconvenient step even
when roaming is set up manually.
