Ok, I did. I got nice messages about it looking for the correct file. I finally found out that I could have saved the effort - it was so simple: /etc/init.d/courier-imap-ssl looked for the pem file without any IP addresses and simply refused to start the server. Created a dummy file, and it works. Don't ask my why I did't try this first... ;) I suggest this IP address thing should be included in the documentation, so this FAQ can be answered without using google and mailing lists, and so that for example gentoo developers have a chance to change their init script to respect that possibility.
