I was asked how to configure iphone for access to our self issued
certificate IMAP server, does anyone have such instructions that I can
borrow ?

I borrowed an iphone, and, tried it, it appeared to me that iphone
self-configure it self, it just kept complaining about our self issued
certificate, but, after a few attempts, the warning went away, and, it
seems to work,

then the iphone owner took his iphone away

but if anyone has instruction better than 'keep trying until there is no
more warnings' I'd be grateful

This is a fundamental aspect of TLS/SSL. A server's certificate must be signed by an authority on the client's trusted authority list. The only way to eliminate the warning is to pay to have your certificate signed by one of the CAs.

The other way, of course, is to create your own authority cert and have it added to the client's trusted authority cert lists. Then, you can use your authority cert to sign your own certificates, which will now be acceptable to the client.

I don't know if Iphone lets you import an authority certificate. I highly doubt it, I'd be shocked if Apple allowed anyone to import arbitrary authority certificates into their highly-controlled environment.
