So, if I understand you correctly, if I have a value specified in the
column defined by MYSQL_MAILDIR_FIELD ('maildir' in my case) then courier
will bypass the delivery defined in DEFAULTDELIVERY in courierd. If I were
to set that column to '| /usr/local/bin/maildrop' then courier would then
filter it. Can I assume that MAILDROPDEFAULT (in courierd) would be
honored?

Would changing the value in my 'maildir' column screw up web mail?
