Ok - this has been my "first date" with Courier-IMAP.

I've managed to install it and apparently get it working. I've tested it
by going over to the horrible XP box and using MS Slouchlook2002 to
connect to the box, and was even able to create a folder - and dump
email INTO the mailbox.

Ok...so that was the first part.

Now, I need to either use FETCHMAIL or some other facet of Courier to
suck email from an ISP, dump it into the mail server. How? Dox are
great, but somewhat, er, not great.

As well, what means by which to administer the Courier server software?
