If you look in the imapd file inside courier's 'etc' directory you'll see a line that says DEBUG_LOGIN=0 Change that to a '1' to see the username they used and a '2' to see the password as well. (The instructions are there in the file.) I don't remember exactly when this was included in the code but you'll need a fairly recent version of courier.
