I had weird problems with Fedora Core 3, which I think were tied to
issues with fam/gamin.  I don't know all the issues that are tied to
different versions.  I am by no means an expert.  I know for a fact that
Courier works well with CentOS 3.3 (when building RPMS) and 3.4 (if
you've already built rpms... They won't build on it).  I also have
Courier running like a champ on RedHat 9, FC1 and FC2.

Are you running SSL?  How much RAM does your server have?  Have you run
a top on the server while the problem is happening?
