Now I'm thinking that all the different servers might have simple setup guides to follow and might give me what I need... Which would be a bit of a shame.

I would rather have a document with more information than I need that less ;)
The INSTALL doc is "complete" and it will get you up and running. If you have courier completely installed including configuration files. You can skip to somewhare around the section titled "Post-installation setup" and proceed. You will only have to look at installation if you have a problem. As you proceed and have specific issues, you can ask on this list.
