Tarpitting takes place on a per-connection basis, so tarpitting your anti-spam device effectively tarpits the spammer by proxy. The biggest problem you may run in to is that your anti-spam device may have a lot of open connections to your Courier host. You'd have to watch that and make sure your MAXPERIP setting was large enough.
