We are implementing quotas soon, and we are looking at 2Gig quotas. That seems a bit much too me. Would courier-imap work reliably with a
quota that big?

Not on a 32-bit platform.

I know pop3 would have huge problems if someone had
to download their inbox with that many messages. I'm thinking more
along the lines of 500M.

On a 32-bit platform, the highest quota you can reasonably expect to work would be in the neighborhood of 1 gig.

Furthermore, the number of messages in a single folder is also a limiting factor.

First of all, there's no way you can stuff a single filesystem directory with 500 million files. You're going to croak. The results will be something like this: http://www.wnbc.com/family/5060215/detail.html
