I have been running Courier on Fedora and Centos 4 and it works great.
I haven't tried on other platforms.

I would say that Linux is the best choice simply because that is the
main development environment (RedHat, IIRC).  If you are running the
same distro as the developer, things will probably go much smoother
for you.
