That's the reason why catch-all-accounts are a very bad idea in general.

Most times, you cannot disable a catch-all later, so beter never start one!

My personal hint in these situations:
I use a .courier-bwurst:org-tag-default file (when mapping for my domain goes 
to bernd-bwurst.org) and so I can use "[email protected]" as a catch-all to 
make individual addresses per peer and I don't have any spam problems with 
guessed mail addresses.
