I have assigned esmtpd to listen to a single IP address, on a
host with several virtual IPs and not via the default IP of
xxx.6.248.2. nmap shows the right ports open on just this IP,
and not the others, but when I go to send via this host the
outgoing IP seems to be arbitrary and changes. The "me" file

By default, your kernel decides that, based on the destination IP address.

Is it possible to force outgoing message via a single virtual
interface?

Set SOURCE_ADDRESS or SOURCE_ADDRESS_IPV6 in courierd.
