If a maildirquota is set, the Courier-IMAP server will update it. I am not familiar with that software and I don't know if it supports the IMAP QUOTE extension. IMAP has an extension for reports the mailbox's quota, if your IMAP client supports it then it should show the updated quota, accordingly.
