Good morning!

We are developing a webshop on a server with Courier MTA.
Is there a way to delivery every outgoing message (with various
recipients) to one local maildir?
(And don't send any emails to other hosts.)

Well, the only reason for a mail server to exist is to deliver mail to the recipient's domain.

If you don't want that to happen, you don't need a mail server.

Write a replacement /usr/bin/sendmail stub that simply saves each message in a maildir.
