Apologies, people. I had IE8 and IE7 standalone installed. It appears that if IE7 standalone is installed after IE8, there is some sort of conflict that causes this problem to appear in both browsers.
Reinstalling IE8 fixed it. I'd be very grateful if someone could explain to me what I have to do to make dropdowns work in IE.
