Normally, you automatically own them when they are in your personal card hand. When putting a card from the hand to the table you "own" it and need to remove the ownership to be able to show the card to the other player.
Owning a card usually (I think) sets the card face down for all other players. When releasing ownership, you can have it face up or down as you wish.
