Game companies are not exactly backing you in this effort. I hate to say
that this strategy will likely fail, I do believe it would be awfully
high-risk for you to open without a restaurant side. Unless you have an
unusual situation, a cybercafe may have difficulty sustaining itself if
only delivering revenue via a computer-rental establishment; particularly
in a Western country such as the USA. How much are you paying for access
monthly? If under $100/month then you might have a chance.
You may want to reconsider this decision and then go get a good education
on running a high-quality espresso bar from the SCAA org.
(http://www.scaa.org). That is a fine organization that has the appropriate
material for managing the espresso and coffee side of the business.
I hope this helps you avoid unnecessary pain and suffering.
