You have this backwards.  (I am speaking of the actual implementation
on the server.)

The list is 'daily-build'  The alias is 'smokers'.

One should not be able to subscribe to both.

The way the smokers aliases are setup, you _cannot_ subscribe under
that name.  The smokers aliases are there to keep people happy, thats
all. 

(I've tested this - none of the smokers-subscribe type addresses will
work.  You will get a bounce message back referencing instructions for
daily-build - the way it should be.)

Yes.  Use the "real name" of the list.  daily-build.
