Darktable has a generic interface for most sliders that does exactly what you
want and then more. If you read through the blog entries on the website
you'll find a more complete description of the interface but essentially you
can:
a) Drag the slider directly (which you are finding extra sensitive)
b) Directly type in a numeric value
c) Right click the slider where a an input box with guidelines appears.
With this you can drag the slider with completely customisable sensitivity -
the closer to the slider you are the more sensitive, the lower down the curves
you are the less sensitive.

I was recently introduced to Darktable by a friend and am enjoying it after
previously using RawTherapee exclusively. However I have one small gripe - Fine
adjustment of Exposure (done with the small triangular slider of course) is
very fiddly! In RawTherapee this can be done both with a much bigger and less
sensitive slider and also in 1/20th increments by clicks. I find the
RawTherapee interface much easier to use and would welcome something similar
with Darkrable which in all other respects is superior.
Perhaps other users and developers have commented on this too?
