If you're using TurboPrint then yes there is a dialog displayed where you can select all options. Now this is not done for the standard Gtk+ dialog because it is not possible to get good results if you change random values in the printer driver like Gutenprint. Currently the color management in CUPS is disabled (by dt) so all the jobs must be done before.
