Did you also install the NVidia drivers as flatpak? I understood that flatpak won't use the system drivers (sandboxing...).
An alternative would be to compile dt yourself, it's not all that difficult if you follow the instructions provided with the source. Or just wait a bit longer, the announcement of version 4.4.2 on darktable.org is dated 2023-07-22...
