 From what I've heard/read, for OpenCL stuff you'd be better off with an AMD 
rather than an nVidia video card.  The more 
video ram the better.  I'm currently considering a Radeon R9 280X with 3GB RAM, 
though a 270X or 260X would probably do, 
for a lower price.

Yes, darktable is multi-threaded so will use all of the cores of the CPU.  
Personally, I would buy the 4-core part, and 
spend the money you'd save on RAM or a better IPS monitor.
