Do you have Highlight Correction turned on in the camera? If you cannot set
ISO below 200 then you have it on. Turn it on.

What highlight correction does is actually underexpose by 1EV, and then
boost the JPEG by 1EV in software (in the camera) in a way to preserve
highlights. However, Darktable is not aware of this, so it'll show it as it
was shot. 

Just turn that feature off if you have it on and expose things properly
yourself.
