What output from the command to remove darktable did you see:
  "sudo rm -rf /opt/darktable"

  And the result is: /usr/local/bin/darktable

removing /opt/darktable accomplished nothing as that is not where you
installed darktable, ie: /usr/local/bin/darktable

How did you install darktable?
What distro are you running?
Did you try "upgrading" which should replace the old ver with new?

On my openSUSE, to upgrade I would:
  zypper ref;zypper -v up darktable

To remove the app completely, I would:
  zypper -v rm darktable
and remove ~/.cache/darktable
           ~/.config/darktable 
            
but I do not know what you are running
