If a model instance has several fields that may have been modified but
do not necessarily need to be saved, is it possible to perform an
update for just one of those fields?

To give this more context... I'm attempting to update a [rather
dubiously] named "touched_at" property whenever something interacts
with the model in any way. If the model happens to be dirty I can't
assume we intend to save all dirty attributes.

Perhaps the .save() method be instructed which field(s) to save? Or
could I trick it by somehow setting other dirty attributes to clean,
call .save! and then set the formerly dirty attributes back to dirty?
