Yes, of course.

If you want the whole shebang you can do:

--with-pgsql --with-mysql --with-sqlite --with-ldap --with-sieve

and build *all* currently available modules. This is in fact how the
debian build runs configure.

But if you only need a specific backend you can dispense with the
unwanted parts, and thereby avoid unwanted build dependencies.
