Outlook as the IMAP client, but this was usefull enough and I think that I will convert my Mail server to use DBmail as it seems to be a good server.

Basically in dbmail you just need the encryption_type and the password to be set in order to save a plain-text password. Eg. if you have "crypt" as the encryption_type, then the passwd field should be a 13 char encrypted password (or can be a 34 char md5 password if your system's crypt() supports them, though you'd typically set encryption_type to "md5" for that). MS Outlook sends the plain-text password to the server, which hashes it and compares with the value in the db. The only issue is APOP, which requires a plaintext password on the server, because the client uses it to create a hash (which is sent over the wire instead of the password), so both server and client need to have the same plaintext pw.
