Well, authentication is done by an LDAP bind, so you must use the uid or
cn value in LDAP, depending on your DN structure.

uid=matt,ou=Users,dc=domain,dc=org
[email protected]
[email protected]
[email protected]
uid=matt
cn=Matt

But usermap to the rescue (doc/README.usermap)

say you insert into dbmail_usermap:

login           | userid
----------------+-----------------
[email protected] | matt

now you can login to IMAP with login [email protected], and dbmail will
resolve this and bind to DN: uid=matt,ou=Users,dc=domain,dc=org

No idea what you mean here. Maybe some example?
