'out of phase' means that the hot and ground are switched on one channel.
in analog days, what you would have to do is:

- play the tape on one deck,
- connect the output of the playback deck to the input of a second deck,
- on ONE channel, switch the hot and ground wires,
- and record the result.

in analog days, typically, you would be using two cables (one for the left
channel and one for the right channel) with rca plugs at each end.  each
cable has two conductors (wires) - a hot and a ground.  the hot would be
connected to the center of the rca plug, at both ends of the cable.  the
ground would be connected to the outside of the rca plug, at both ends.  to
get this out of phase, you would have to switch connectors at one end of
the cable (i.e.  the hot/center at one end is connected to the outside at
the other end, and the outside at one end is connected to the center at the
other end).
