That worked, however just for completeness for anyone with a similar problem reading this thread, there are two additional steps to take.
Firstly, you need to chroot into your installation target, so "chroot /target /bin/bash". And you will then need to manually mount /proc.
I'm now the happy user of a jaw-droppingly quick pure64 install, thanks! :)
