Quoting the manual:
To create a MD device, you need to have the desired partitions it should 
consist of marked for use in a RAID. (This is done in partman in the 
Partition settings menu where you should select
Use as:->Use the partition as a RAID device.) 
^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^

If you do not have this option, that probably means the correct installer 
modules have not been loaded or for some reason are not available for 
your architecture.
The module (udeb) you need is partman-md.
