I upgraded wavemon to 0.4.0b-9 (from 0.4.0b-7) and now I just get a dump
of wireless state instead of the fullscreen display with levels and
history I'm used to. I can't find any link to this change in behaviour
in the manpage or in the documentation on the web.

I retried wavemon 0.4.0b-9 today and it doesn't have the same problem.
I get the full-screen version again.
