If you add the ability to specify filesystem labels in disk_config,
I'll treat you to a beer next time we meet. Specifically, I need to
use them for xfs.

Why don't you allow any options to be specified in the ';' field in
disk_config and just pass them on to mkfs if you don't know how to
interpret them otherwise?
