The mimedefang package contains /etc/default/mimedefang where you can
set various variables to alter the behaviour of mimedefang.
Ufortunately it deosn't work because /etc/init.d.mimedefang looks for
the file in /etc/mail/mimedefang.conf.

Ah, it turned out to be a local problem. Another admin had upgraded
from an older version of the package, but had failed to reconcile
local changes to /etc/init.d/mimedefang with the new version of the
file.
