Hi, 

in the past I was able to edit a lettre with the lettre.cls without
having to move commands under the \begin{letter}, that's my first point.

The second is that IMHO it is not normal (usual) that you should have
default settings like a default name, address, phone number or so, instead 
of having the free choice.

That's why I submit this under a [wishlist]; feel free to recathegorize
this under severity level 4.
