Since GNOME 2.8, you have to switch the
/desktop/gnome/interface/can_change_accels GConf key (for example via
gconf-editor) to be able to define keyboard shortcuts in Gtk menus.
I could successfully change my key bindings this way, hence I'm closing
the bug.
