The man page for suricata-update(1) does not document the list-enabled-sources 
command.

It also appears absent in the builtin help when called as suricata-update 
--help.

The feature appears to be undocumented. The relevant code is located in:

/usr/lib/python3/dist-packages/suricata/update/parsers.py

I believe this issue needs to be forwarded upstream.

I have raised this with upstream in their Redmine ticket https:// redmine.openinfosecfoundation.org/issues/7800 and also opened a PR here:
https://github.com/OISF/suricata-update/pull/359

FYI this has made its way into upstream's version 1.3.7 of suricata-update, which I packaged and uploaded today.
