Hello, I encounter a similar problem with Français (variante).
In gnome-control-center my settings are like that: Français (variante) Anglais (USA) But the actual layout is none of them, it's still the system default's that applies: 'Français' (not the 'variante') and the applet won't allow me to switch between my setting. If I open gnome-control-center and removes 'Français (variante)' then the keyboard layout switch to the setting 'Anglais (USA)'. I can add 'Anglais (UK)' and switch between them. But as soon as I add 'Français (variante)' again, I can't switch and I'm stuck with Anglais. However, if I add the system's default 'Français' to 'Français (variante)' then I can switch properly using the applet. Anyway, this is all a bit weird and difficult to explain. I hope it gets fixed.
