Unfortunately, I still can't reproduce this bug on my system, even with your conky config file (conky refreshes constantly every 5 seconds for me). With my own conky setup, where I have update_interval set to 1, conky always refreshes every second, and the update interval stays constant. I have no idea what might be causing this bug to occur on your system, so all I can do at the moment is leave this bug report open. Have you tried asking about this on conky's mailing lists?
