Hi all from the Ettercap dev team, The purpose of disabling ip forwarding is so that filters can work. If you run a filter that is attempting to replace or inject data, this will not work if ip forwarding is enabled. Ettercap captures the current status of ip forwarding and sets it to that value upon exit. Given that running ettercap from the gateway itself is not the popular use of the tool, we are not changing it to run in unoffensive mode by default.
