Hello Noel, this works here on 3.1.16 from backports and 10.0.x in wheezy. All my installations and later creation of a new accounts in icedove does *not* have this deleting after 30 days enabled by default! Did you use a clean fresh profile?
If not please backup your current .icedove folder and start from scratch. I'm sure the default is "Don't delete any messages". If not there would be more people who have your problem too.
