If it's truly a drop-in replacement, you could convert the squid source
package to a transition package, i.e. a dummy source package with provides
binary packages, which depend on the squid3 counterparts.
After jessie release we can then remove the fake squid source package.

Have a look at the openoffice.org source package in Wheezy: Rene made it
to ensure the transition to LibreOffice.
